An overnight sourdough pancake mix made with organic flour and dehydrated sourdough starter for a slow-fermented, grain-forward flavor and easier digestion.

Best for: slow mornings, fresh berries, maple syrup, yogurt, butter.

Fermentation: Overnight room-temperature fermentation

Ingredients: Organic all-purpose flour, organic rye flour, organic sourdough starter (organic bread flour, water), fermented rye malt, salt.

Instructions:

  1. Mix 1 cup pancake mix with ¾ cup milk, buttermilk, plant milk, or water.
  2. Cover loosely and leave at room temperature overnight (8–12 hours).
  3. In the morning, add 1 egg, 1 tbsp melted butter or oil, and ¼ tsp baking soda.
  4. Add sugar or your favorite sweetener to taste.
  5. Mix gently. If batter feels too thick, add 1–2 tbsp milk or water.
  6. Cook on a lightly greased skillet over medium heat until bubbles form on top and edges look set. Flip and cook until golden.
